Description

Create a rich and festive Eggnog Crème Brûlée, a decadent Christmas dessert blending creamy custard with the warm spices of holiday eggnog, finished with a perfect crackly caramelized sugar top. This recipe brings culinary artistry and joyful connection to your kitchen.

Ingredients

Scale
  • 6 large egg yolks
  • 1/2 cup granulated sugar plus extra for sprinkling
  • 2 cups heavy cream
  • 1 cup eggnog (good quality)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Gather six 4-ounce ramekins and place them in a deep baking dish.
  3. In a medium bowl, whisk the egg yolks and 1/2 cup sugar until pale and smooth.
  4. In a saucepan, gently heat the heavy cream, eggnog, nutmeg, and salt until steaming, but do not boil.
  5. Slowly temper the egg mixture by pouring the warm cream mixture into the yolks in a thin stream while whisking constantly.
  6. Stir in the vanilla extract.
  7. Strain the custard mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.
  8. Divide the custard evenly among the prepared ramekins.
  9. Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins, creating a water bath (bain-marie).
  10. Bake for 30 to 35 minutes, or until the edges are set but the centers still jiggle slightly.
  11. Remove the ramekins from the water bath and let them cool completely on a wire rack.
  12. Chill the custards in the refrigerator for at least 4 hours, or preferably overnight.
  13. Before serving, sprinkle an even, thin layer of sugar over the top of each chilled custard.
  14. Use a kitchen torch to melt and caramelize the sugar until it forms a hard, amber crust.
  15. Let the caramelized sugar set for a few minutes before serving immediately.

Notes

  • Using high-quality eggnog makes a noticeable difference in flavor.
  • Do not skip the water bath; it ensures gentle, even cooking.
  • For the best crackle, chill the custards fully before torching the sugar.
  • If you do not have a torch, place the sugared ramekins under a preheated broiler, watching constantly to prevent burning.
