- 8 ounces small pasta (like rotini or farfalle)
- 5 ounces fresh baby spinach
- 1 pint fresh strawberries, hulled and sliced
- 4 ounces feta cheese, crumbled
- 1/4 cup slivered almonds, toasted
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Drain the pasta and rinse it well with cold water to cool it down quickly. Set aside.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard. Season the dressing with salt and pepper.
- In a large bowl, combine the cooled pasta, baby spinach, sliced strawberries, and crumbled feta cheese.
- Pour the prepared dressing over the salad ingredients.
- Toss gently until everything is evenly coated.
- Stir in the toasted slivered almonds just before serving.
Notes
- You can toast the almonds by heating them in a dry skillet over medium heat for 3 to 5 minutes, stirring often until fragrant.
- For a heartier meal, add 1 cup of cooked, shredded chicken breast.
- If you prefer a different green, substitute the spinach with arugula.
