Prepare this simple, refreshing pasta salad featuring fresh strawberries, spinach, and salty feta cheese with a light balsamic dressing.


Ingredients

  • 8 ounces small pasta (like rotini or farfalle)
  • 5 ounces fresh baby spinach
  • 1 pint fresh strawberries, hulled and sliced
  • 4 ounces feta cheese, crumbled
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse it well with cold water to cool it down quickly. Set aside.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard. Season the dressing with salt and pepper.
  3. In a large bowl, combine the cooled pasta, baby spinach, sliced strawberries, and crumbled feta cheese.
  4. Pour the prepared dressing over the salad ingredients.
  5. Toss gently until everything is evenly coated.
  6. Stir in the toasted slivered almonds just before serving.

Notes

  • You can toast the almonds by heating them in a dry skillet over medium heat for 3 to 5 minutes, stirring often until fragrant.
  • For a heartier meal, add 1 cup of cooked, shredded chicken breast.
