Easy Pizza Muffins: Perfect Lunchbox Pizza Bites

Description

Make fun, bite-sized pizza muffins packed with pepperoni and cheese. These are great for quick snacks, parties, or packing in lunchboxes.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese, plus extra for topping
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1 teaspoon dried oregano
  • 1/2 cup mini pepperoni slices
  • 1/2 cup pizza sauce

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, pepper, and Parmesan cheese.
  3. Stir in the mozzarella cheese and pepperoni slices until they distribute evenly through the dry mix.
  4. In a separate bowl, combine the milk, vegetable oil, and egg. Whisk until blended.
  5. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  6. Fold in the dried oregano.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Top each muffin with a small spoonful of pizza sauce, spreading it lightly over the top. Sprinkle a little extra mozzarella cheese on top of the sauce.
  9. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These cheesy pizza cupcakes freeze well. Cool them completely, then place them in a freezer-safe bag. Thaw overnight or reheat from frozen at 350 degrees Fahrenheit for about 15 minutes.
  • Feel free to swap the pepperoni for cooked, crumbled sausage or chopped vegetables like bell peppers for a different flavor.
  • For extra flavor, brush the tops lightly with melted garlic butter right after they come out of the oven.
