Description

Make a quick, creamy, and lighter Caesar dressing using Greek yogurt instead of mayonnaise. This recipe takes five minutes to whisk together.


Ingredients

  • 1 cup plain Greek yogurt (2% or whole milk recommended)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon anchovy paste (optional, omit for vegetarian)
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • Pinch of salt, to taste

Instructions

  1. Place the Greek yogurt, lemon juice, olive oil, Dijon mustard, minced garlic, Worcestershire sauce, and anchovy paste (if using) into a medium bowl.
  2. Whisk the ingredients together until they are fully combined and smooth.
  3. Stir in the grated Parmesan cheese and black pepper.
  4. Taste the dressing and add salt as needed. Remember that Parmesan cheese is salty.
  5. If the dressing is too thick for your preference, whisk in 1 teaspoon of cold water at a time until you reach your desired consistency.
  6. Use immediately over salad greens or cover and refrigerate for later use.

Notes

  • For a smoother dressing without minced garlic texture, use a small food processor or immersion blender to combine all ingredients.
  • If you skip the anchovy paste, add a few drops of liquid smoke or extra Worcestershire sauce for depth of flavor.
