Description
Make a quick, creamy, and lighter Caesar dressing using Greek yogurt instead of mayonnaise. This recipe takes five minutes to whisk together.

- 1 cup plain Greek yogurt (2% or whole milk recommended)
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon anchovy paste (optional, omit for vegetarian)
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- Pinch of salt, to taste
Instructions
- Place the Greek yogurt, lemon juice, olive oil, Dijon mustard, minced garlic, Worcestershire sauce, and anchovy paste (if using) into a medium bowl.
- Whisk the ingredients together until they are fully combined and smooth.
- Stir in the grated Parmesan cheese and black pepper.
- Taste the dressing and add salt as needed. Remember that Parmesan cheese is salty.
- If the dressing is too thick for your preference, whisk in 1 teaspoon of cold water at a time until you reach your desired consistency.
- Use immediately over salad greens or cover and refrigerate for later use.
Notes
- For a smoother dressing without minced garlic texture, use a small food processor or immersion blender to combine all ingredients.
- If you skip the anchovy paste, add a few drops of liquid smoke or extra Worcestershire sauce for depth of flavor.
- This dressing thickens slightly when chilled; thin it with a teaspoon of water or milk before serving cold.
