Description

Easy Foil Packet Salmon is a healthy summer dinner perfect for kids. Cook it on the grill or in the oven for minimal cleanup.

Ingredients

Scale
  • 4 (4-6 ounce) salmon fillets
  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Lemon slices (optional)

Instructions

  1. Preheat grill to medium-high heat (or preheat oven to 400°F (200°C)).
  2. Tear off four large pieces of heavy-duty aluminum foil.
  3. Place one salmon fillet in the center of each piece of foil.
  4. Divide the trimmed asparagus among the four foil packets, placing it alongside the salmon.
  5. Drizzle olive oil over the salmon and asparagus.
  6. Sprinkle garlic powder, salt, and pepper over the salmon and asparagus.
  7. Top each packet with a lemon slice, if desired.
  8. Bring the edges of the foil together and seal tightly to form a packet.
  9. Place packets on the preheated grill or baking sheet.
  10. Grill for 12-15 minutes, or bake for 15-18 minutes, or until salmon is cooked through and flakes easily with a fork.
  11. Carefully open packets (steam will be hot) and serve.

Notes

  • Adjust cooking time based on the thickness of the salmon fillets.
  • You can substitute other vegetables like broccoli florets or bell pepper strips for the asparagus.
  • For picky eaters, try serving the salmon flaked and mixed with a little cooked rice or pasta.
