Easy Foil Packet Salmon is a healthy summer dinner perfect for kids. Cook it on the grill or in the oven for minimal cleanup.

- 4 (4-6 ounce) salmon fillets
- 1 pound asparagus, trimmed
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Lemon slices (optional)
Instructions
- Preheat grill to medium-high heat (or preheat oven to 400°F (200°C)).
- Tear off four large pieces of heavy-duty aluminum foil.
- Place one salmon fillet in the center of each piece of foil.
- Divide the trimmed asparagus among the four foil packets, placing it alongside the salmon.
- Drizzle olive oil over the salmon and asparagus.
- Sprinkle garlic powder, salt, and pepper over the salmon and asparagus.
- Top each packet with a lemon slice, if desired.
- Bring the edges of the foil together and seal tightly to form a packet.
- Place packets on the preheated grill or baking sheet.
- Grill for 12-15 minutes, or bake for 15-18 minutes, or until salmon is cooked through and flakes easily with a fork.
- Carefully open packets (steam will be hot) and serve.
Notes
- Adjust cooking time based on the thickness of the salmon fillets.
- You can substitute other vegetables like broccoli florets or bell pepper strips for the asparagus.
- For picky eaters, try serving the salmon flaked and mixed with a little cooked rice or pasta.
