Description

Make these fluffy, high-protein egg bites at home! This easy recipe is perfect for meal prep and tastes like your favorite coffee shop version. Customize with bacon, cheese, or spinach for a quick grab-and-go breakfast.

Ingredients

Scale
  • 1 cup cottage cheese (2% or full fat)
  • 1 cup eggs (about 5 large eggs)
  • 1/4 cup Greek yogurt (plain, full fat recommended)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup mix-ins (e.g., cooked bacon crumbles, shredded cheddar cheese, chopped spinach)

Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease a 12-cup muffin tin or use silicone liners.
  2. Combine the cottage cheese, eggs, Greek yogurt, salt, pepper, and garlic powder in a blender. Blend until the mixture is completely smooth and creamy. This step is key for fluffy egg bites.
  3. If using mix-ins like bacon, cheese, or spinach, stir them into the blended egg mixture in a bowl. Do not blend the mix-ins.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
  6. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
  7. Serve warm or store them for meal prep. These are fantastic as a low carb egg bites recipe.

Notes

  • For a Starbucks sous vide egg bites copycat texture, you can use a pressure cooker with a trivet and water bath, cooking on high pressure for 8 minutes, followed by a 5-minute natural release.
  • These egg bites freeze well. Cool completely, then place them in a freezer-safe bag. Reheat in the microwave for 30-60 seconds.
  • To make them keto egg bites, stick to low-carb additions like bacon, cheese, and non-starchy vegetables like spinach or broccoli florets.
