Description

You will love this easy crockpot potato soup. It is a warm, comforting meal that requires very little active work. We make this hearty soup loaded with bacon and cheese for the ultimate cozy dinner experience. Let your slow cooker do the heavy lifting!


Ingredients

  • 3 pounds frozen hash browns, thawed
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 (10.75 ounce) can cream of celery soup
  • 1 (8 ounce) package cream cheese, cubed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk (or half-and-half for richer soup)
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced (for garnish)

Instructions

  1. Place the thawed hash browns, chopped onion, chicken broth, cream of chicken soup, and cream of celery soup into your slow cooker.
  2. Stir the ingredients gently to combine them well.
  3. Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the potatoes are tender.
  4. About 30 minutes before serving, stir in the cubed cream cheese until it melts completely into the soup base.
  5. Whisk in the milk or half-and-half until the soup reaches your desired consistency. Season with salt and pepper.
  6. Ladle the hot soup into bowls. Top each serving generously with crumbled bacon, shredded cheddar cheese, and sliced green onions. Serve immediately.

Notes

  • For an extra creamy texture, use half-and-half instead of regular milk.
  • If you prefer a thicker soup, mash a small portion of the potatoes against the side of the slow cooker before adding the milk.
