Description

You will love this Super Easy 30-Minute Creamy Chicken Taco Soup. It is packed with flavor, incredibly simple to make, and perfect for a quick weeknight meal. You can cook this on the stovetop or toss it in the slow cooker for hands-off cooking. We add cream cheese for a rich, comforting texture.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 packet (about 1 oz) taco seasoning mix
  • 4 cups chicken broth
  • 4 ounces cream cheese, cubed
  • Optional toppings: Shredded cheese, sour cream, avocado, tortilla strips

Instructions

  1. Place the chicken, black beans, kidney beans, Ro-Tel, cream of chicken soup, green chilies, taco seasoning, and chicken broth into a large pot or Dutch oven.
  2. If cooking on the stovetop, bring the mixture to a boil over medium-high heat, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through.
  3. If using a slow cooker, cook on HIGH for 3-4 hours or on LOW for 6-8 hours.
  4. Remove the cooked chicken and shred it using two forks. Return the shredded chicken to the pot.
  5. Add the cubed cream cheese to the soup. Stir constantly over low heat until the cream cheese is fully melted and the soup is creamy. Do not let it boil after adding the cream cheese.
  6. Taste and adjust seasonings if needed.
  7. Serve hot with your favorite toppings, like shredded cheese or tortilla strips.

Notes

  • For a richer flavor, use rotisserie chicken instead of raw chicken breasts.
  • If you prefer a thinner soup, add a little extra chicken broth until you reach your desired consistency.
  • This soup freezes well. Cool completely before transferring to an airtight container.
  • If you don’t have taco seasoning, you can mix chili powder, cumin, paprika, onion powder, and garlic powder to create your own blend.
