Description
Enjoy this easy, creamy, pub-style Beer Cheese Dip, ready in about 15 minutes. It delivers rich, savory flavor perfect for game days and parties when served with your favorite pretzels or chips.
Ingredients
Scale
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk (whole or 2%)
- 1/2 cup beer (lager or pale ale recommended)
- 8 ounces sharp cheddar cheese, shredded
- 4 ounces cream cheese, cubed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of cayenne pepper (optional)
Instructions
- Melt the butter in a medium saucepan over medium heat.
- Whisk in the flour until a smooth paste forms. Cook for one minute, stirring constantly.
- Slowly whisk in the milk until the mixture is smooth. Bring it to a gentle simmer, stirring until the sauce thickens slightly.
- Pour in the beer and stir well. Reduce the heat to low.
- Add the shredded cheddar cheese and cubed cream cheese. Stir gently until both cheeses are completely melted and the dip is smooth and creamy. Do not boil.
- Remove the saucepan from the heat. Stir in the salt, pepper, and cayenne pepper, if using.
- Serve immediately with soft pretzels, tortilla chips, or vegetable sticks.
Notes
- Shred your own block cheese; pre-shredded cheese contains anti-caking agents that can make the dip grainy.
- Use a beer you enjoy drinking, as the flavor will concentrate in the dip.
- For a thicker dip, cook the initial roux (butter and flour) slightly longer.
- If the dip gets too thick while serving, whisk in a splash of extra milk or beer to loosen it.
