Description

Enjoy this easy, creamy, pub-style Beer Cheese Dip, ready in about 15 minutes. It delivers rich, savory flavor perfect for game days and parties when served with your favorite pretzels or chips.

Ingredients

Scale
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk (whole or 2%)
  • 1/2 cup beer (lager or pale ale recommended)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, cubed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour until a smooth paste forms. Cook for one minute, stirring constantly.
  3. Slowly whisk in the milk until the mixture is smooth. Bring it to a gentle simmer, stirring until the sauce thickens slightly.
  4. Pour in the beer and stir well. Reduce the heat to low.
  5. Add the shredded cheddar cheese and cubed cream cheese. Stir gently until both cheeses are completely melted and the dip is smooth and creamy. Do not boil.
  6. Remove the saucepan from the heat. Stir in the salt, pepper, and cayenne pepper, if using.
  7. Serve immediately with soft pretzels, tortilla chips, or vegetable sticks.

Notes

  • Shred your own block cheese; pre-shredded cheese contains anti-caking agents that can make the dip grainy.
  • Use a beer you enjoy drinking, as the flavor will concentrate in the dip.
  • For a thicker dip, cook the initial roux (butter and flour) slightly longer.
  • If the dip gets too thick while serving, whisk in a splash of extra milk or beer to loosen it.
