Description

Make simple, decadent dessert bars featuring layers of chocolate, sweet coconut, and crunchy pecans.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup sweetened flaked coconut
  • 1/2 cup chopped pecans
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine the flour, softened butter, brown sugar, and salt. Mix until the mixture resembles coarse crumbs.
  3. Press this crumb mixture evenly into the bottom of the prepared pan to form the base layer.
  4. Bake the base for 12 minutes until lightly golden. Remove from the oven.
  5. Sprinkle the chocolate chips evenly over the hot base layer.
  6. In a separate small bowl, whisk together the egg and vanilla extract.
  7. In another bowl, mix the flaked coconut and chopped pecans.
  8. Pour the egg mixture over the chocolate chips. Then, evenly sprinkle the coconut and pecan mixture over the top.
  9. Return the pan to the oven and bake for an additional 18 to 20 minutes, or until the topping is set and lightly browned.
  10. Let the bars cool completely in the pan on a wire rack before lifting out using the parchment overhang and cutting into squares.

Notes

  • For a richer chocolate flavor, use dark chocolate chips instead of semi-sweet.
  • You can toast the pecans lightly before adding them for deeper flavor.
  • Chill the bars for 30 minutes after cooling to make cutting cleaner.
