Description

  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 packet (1 oz) taco seasoning mix
  • 1/2 cup water
  • 12 small corn or flour tortillas
  • Toppings: chopped onion, fresh cilantro, lime wedges, salsa, shredded cheese

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 2-3 minutes per side until lightly browned.
  2. Pour in the chicken broth and water. Bring the liquid to a simmer.
  3. Sprinkle the taco seasoning evenly over the chicken. Stir to combine the seasoning with the liquid.
  4. Reduce the heat to medium-low, cover the skillet, and let the chicken simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken breasts from the skillet and place them on a cutting board. Keep the remaining liquid simmering in the pan.
  6. Use two forks to shred the chicken completely. Return the shredded chicken to the skillet with the simmering liquid. Toss the chicken to coat it thoroughly in the sauce. Cook for 2 minutes until the chicken absorbs the flavor.
  7. Warm your tortillas according to package directions (you can warm them directly over a gas flame for a few seconds per side for authentic flavor).
  8. Fill each tortilla with the seasoned shredded chicken filling. Top with your favorite fresh toppings like onion, cilantro, cheese, and a squeeze of lime juice. Serve immediately for your family chicken dinner.
