Description

  • 1 loaf day-old bread (Brioche or Challah recommended), cut into 1-inch cubes
  • 6 large eggs
  • 1 1/2 cups milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons granulated sugar (for the batter)
  • 1/2 cup melted butter
  • 1/2 cup granulated sugar (for the topping)
  • 1 tablespoon ground cinnamon (for the topping)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Grease a standard 12-cup muffin tin well, or use paper liners.
  2. Place the bread cubes evenly into the prepared muffin cups, filling them about 3/4 full. Press them down gently.
  3. In a large bowl, whisk together the eggs, milk, vanilla extract, 1 teaspoon cinnamon, nutmeg, and 2 tablespoons sugar until well combined.
  4. Pour the egg mixture evenly over the bread cubes in the muffin tin. Let the mixture sit for 5 to 10 minutes, allowing the bread to soak up the custard.
  5. In a small bowl, mix the 1/2 cup sugar and 1 tablespoon cinnamon for the topping.
  6. Brush the tops of the soaked bread cubes lightly with the melted butter.
  7. Sprinkle the cinnamon-sugar topping generously over each muffin cup.
  8. Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out mostly clean (a little moistness is fine).
  9. Let the muffins cool in the tin for 5 minutes before carefully removing them to a wire rack to cool completely.

Notes

  • Day-old bread works best as it soaks up the custard without becoming too soggy.
  • For a richer flavor, use Brioche or Challah bread.
