Description

Make incredibly crispy, golden Air Fryer Beef and Cheese Chimichangas. This recipe brings the rich flavor of Tex-Mex comfort food to your table quickly, offering a crunchy texture without the deep-fry mess. You will love this simple, flavorful meal.

Ingredients

Scale
  • 1 lb Ground Beef
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Salsa
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Chili Powder
  • 8 Small Flour Tortillas (Burrito size)
  • Cooking Spray (for air fryer)

Instructions

  1. Brown the ground beef in a skillet. Drain off any excess fat.
  2. Stir the salsa, cumin, and chili powder into the cooked beef. Heat through for about two minutes.
  3. Remove the beef mixture from the heat. Stir in the shredded cheddar cheese until just melted.
  4. Lay a tortilla flat. Place about 1/4 cup of the beef and cheese mixture slightly off-center on the tortilla.
  5. Fold the sides of the tortilla inward over the filling.
  6. Tightly roll the tortilla from the bottom up to create a sealed log shape. Secure with toothpicks if necessary.
  7. Lightly spray the rolled chimichangas on all sides with cooking spray.
  8. Place the chimichangas in the air fryer basket in a single layer, ensuring they do not overlap.
  9. Air fry at 375°F (190°C) for 8 to 10 minutes, flipping halfway through, until they are golden brown and crispy.
  10. Serve immediately with your favorite toppings like sour cream, guacamole, or extra salsa.

Notes

  • For extra crispiness, you can lightly brush the tortillas with melted butter before spraying them with oil.
  • If you prefer chicken, substitute the ground beef with cooked, shredded chicken breast.
  • Ensure the filling is not too wet before rolling, or your chimichangas may tear.
  • This recipe is designed for quick cooking; adjust time based on your air fryer model.
