Description
Make fast, individual egg cups with Caprese flavors using only your microwave. This recipe takes under five minutes from start to finish.
Ingredients
Scale
- 2 large eggs
- 1 tablespoon milk or water
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons fresh mozzarella cheese, diced
- 1 teaspoon fresh basil, chopped
- Pinch of salt
- Pinch of black pepper
- Cooking spray
Instructions
- Lightly grease two standard-sized ramekins or a muffin tin with cooking spray.
- In a small bowl, whisk the eggs and milk or water together. Add salt and pepper.
- Divide the halved cherry tomatoes and diced mozzarella evenly between the two prepared ramekins.
- Pour the egg mixture over the cheese and tomatoes in each ramekin.
- Sprinkle the chopped fresh basil over the top of the eggs.
- Microwave on high for 60 to 90 seconds. Check for doneness; the eggs should be set but not rubbery. If needed, microwave in 15-second increments until cooked through.
- Carefully remove the cups from the microwave. Let them cool for one minute before serving or removing from the ramekins.
Notes
- For easier removal, use silicone muffin liners if you have them.
- If your microwave is very powerful, start with 60 seconds to prevent overcooking.
- You can substitute dried basil, but fresh basil provides better flavor.
