A simple, cheesy, and crunchy baked casserole featuring ground beef and Nacho Cheese Doritos, suitable for a quick weeknight dinner.

- 1 pound ground beef
- 1 medium onion, chopped
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10 ounce) can condensed cream of chicken soup
- 1 cup milk
- 1 teaspoon taco seasoning
- 2 cups shredded cheddar cheese, divided
- 1 (4 ounce) can diced green chiles, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) bag Nacho Cheese Doritos, lightly crushed
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain any excess grease.
- Stir the cream of mushroom soup, cream of chicken soup, milk, and taco seasoning into the skillet with the beef mixture. Cook until heated through.
- Remove the skillet from the heat. Stir in half of the shredded cheese, the green chiles, and the black beans.
- Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
- Spoon the beef mixture over the layer of Doritos.
- Top the beef mixture with the remaining crushed Doritos.
- Sprinkle the remaining half of the shredded cheese over the top layer of chips.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Notes
- You can substitute Cool Ranch Doritos for Nacho Cheese if you prefer a different flavor profile.
- For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours before baking. Add 10 minutes to the bake time if cooking directly from the refrigerator.
- Serve with sour cream or salsa on the side.
