Description

A simple, cheesy, and crunchy baked casserole featuring ground beef and Nacho Cheese Doritos, suitable for a quick weeknight dinner.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese, divided
  • 1 (4 ounce) can diced green chiles, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) bag Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain any excess grease.
  3. Stir the cream of mushroom soup, cream of chicken soup, milk, and taco seasoning into the skillet with the beef mixture. Cook until heated through.
  4. Remove the skillet from the heat. Stir in half of the shredded cheese, the green chiles, and the black beans.
  5. Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
  6. Spoon the beef mixture over the layer of Doritos.
  7. Top the beef mixture with the remaining crushed Doritos.
  8. Sprinkle the remaining half of the shredded cheese over the top layer of chips.
  9. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

Notes

  • You can substitute Cool Ranch Doritos for Nacho Cheese if you prefer a different flavor profile.
  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours before baking. Add 10 minutes to the bake time if cooking directly from the refrigerator.
