Description

This dump and go crockpot marry me chicken recipe creates tender chicken breasts swimming in a rich, creamy Parmesan sauce with sun-dried tomatoes. It is the perfect easy crockpot chicken recipe for family dinners or date night.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (or thighs for extra flavor)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1 tablespoon minced garlic
  • 1/2 cup cream cheese, cut into cubes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker. Sprinkle evenly with salt, pepper, garlic powder, and Italian seasoning.
  2. Pour the chicken broth over the chicken. Add the chopped sun-dried tomatoes and minced garlic around the chicken.
  3. Place the cubes of cream cheese on top of the chicken breasts.
  4. Cover the crockpot and cook on LOW for 4 to 6 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender.
  5. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  6. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy. Let it heat through for about 10 minutes on the LOW setting, stirring occasionally.
  7. Taste the sauce and adjust salt or pepper if needed. This creamy Parmesan chicken slow cooker dish is ready when the sauce is fully incorporated and hot.
  8. Serve your crockpot marry me chicken immediately over cooked pasta, rice, or mashed potatoes to capture all the delicious sauce. Garnish with fresh parsley.

Notes

  • If you prefer using chicken thighs, they work wonderfully in this recipe and remain moist. Adjust cooking time slightly if using thighs, aiming for an internal temperature of 165°F.
  • For a richer flavor, use oil-packed sun-dried tomatoes, but drain the oil well before adding them.
  • This recipe is fantastic for meal prep. Store leftovers in an airtight container for up to four days.
  • To thicken the sauce slightly without adding more dairy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir into the hot sauce at the end of cooking.
