Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts (or thighs for extra flavor)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, drained and roughly chopped
- 1 tablespoon minced garlic
- 1/2 cup cream cheese, cut into cubes
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts in the bottom of your slow cooker. Sprinkle evenly with salt, pepper, garlic powder, and Italian seasoning.
- Pour the chicken broth over the chicken. Add the chopped sun-dried tomatoes and minced garlic around the chicken.
- Place the cubes of cream cheese on top of the chicken breasts.
- Cover the crockpot and cook on LOW for 4 to 6 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender.
- Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
- Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy. Let it heat through for about 10 minutes on the LOW setting, stirring occasionally.
- Taste the sauce and adjust salt or pepper if needed. This creamy Parmesan chicken slow cooker dish is ready when the sauce is fully incorporated and hot.
- Serve your crockpot marry me chicken immediately over cooked pasta, rice, or mashed potatoes to capture all the delicious sauce. Garnish with fresh parsley.
Notes
- If you prefer using chicken thighs, they work wonderfully in this recipe and remain moist. Adjust cooking time slightly if using thighs, aiming for an internal temperature of 165°F.
- For a richer flavor, use oil-packed sun-dried tomatoes, but drain the oil well before adding them.
- This recipe is fantastic for meal prep. Store leftovers in an airtight container for up to four days.
- To thicken the sauce slightly without adding more dairy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir into the hot sauce at the end of cooking.
