Description

Make light, crunchy potato chips at home using your preferred method: deep frying, oven baking, or air frying. This guide provides instructions for achieving maximum crispness.

Ingredients

Scale
  • 3 large Russet potatoes
  • 1 tablespoon salt, or to taste
  • Vegetable oil, for frying (if using the deep fry method)
  • 1 teaspoon paprika (optional, for seasoning)
  • 1/2 teaspoon garlic powder (optional, for seasoning)

Instructions

  1. Prepare the Potatoes: Wash and dry the potatoes completely. Do not peel them if you prefer skin-on chips.
  2. Slice Thinly: Using a mandoline slicer or a very sharp knife, slice the potatoes as thinly as possible, aiming for uniform thickness for even cooking.
  3. Rinse and Soak: Place the potato slices in a large bowl of cold water. Swish them around to remove excess starch. Let them soak for at least 30 minutes, or up to 2 hours, changing the water once if it becomes cloudy.
  4. Dry Thoroughly: Drain the slices and spread them out on clean kitchen towels or paper towels. Pat them completely dry. Moisture prevents crispness.
  5. Choose Your Method:
  6. For Deep Frying: Heat 2 inches of oil in a heavy-bottomed pot to 325°F (160°C). Fry the chips in small batches, stirring occasionally, until golden brown and crisp (about 3-5 minutes). Remove with a slotted spoon and drain on paper towels.
  7. For Oven Baking: Preheat your oven to 375°F (190°C). Toss the slices lightly with 1 tablespoon of oil. Arrange them in a single layer on baking sheets lined with parchment paper. Bake for 15-20 minutes, flipping halfway through, until edges are brown and crisp.
  8. For Air Frying: Toss the slices lightly with 1 teaspoon of oil. Place them in the air fryer basket in a single layer (work in batches). Air fry at 350°F (175°C) for 10-15 minutes, shaking the basket every 5 minutes until golden and crisp.
  9. Season Immediately: While the chips are still hot, transfer them to a large bowl. Sprinkle immediately with salt and any other desired seasonings, tossing gently to coat evenly.

Notes

  • The best potatoes for chips are high in starch, like Russets or Idaho potatoes.
  • For the crispiest results in any method, ensure the slices are completely dry before cooking.
  • If you bake or air fry, a light coating of oil helps achieve a golden color.
