Description

This recipe shows you the secret technique to make incredibly crispy baked chicken wings in your oven. Forget the deep fryer; these wings achieve a perfect crunch while keeping the inside juicy. Perfect for your next Game Night or gathering.

Ingredients

Scale
  • 3 lbs chicken wings (flats and drumettes)
  • 1 tablespoon baking powder (aluminum-free is best)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil for easy cleanup.
  2. Place a wire cooling rack on top of the prepared baking sheet. This allows air to circulate completely around the wings.
  3. Pat the chicken wings completely dry using paper towels. This step is critical for crispiness.
  4. In a large bowl, whisk together the baking powder, salt, pepper, garlic powder, and cayenne pepper.
  5. Add the completely dry wings to the bowl. Toss them thoroughly until every piece is lightly and evenly coated with the baking powder mixture.
  6. Arrange the seasoned wings in a single layer on the wire rack. Do not let them touch.
  7. Bake for 20 minutes.
  8. Flip each wing over. Reduce the oven temperature to 400°F (200°C).
  9. Bake for another 20 to 25 minutes, or until the wings are deeply golden brown and exceptionally crispy.
  10. Remove from the oven. Toss immediately with your favorite sauce or serve plain with dips.

Notes

  • The baking powder reacts with the chicken skin, raising the pH level and helping the skin dry out and brown faster.
  • Ensure the wings are in a single layer; overcrowding steams the wings instead of crisping them.
  • Do not substitute regular baking soda for baking powder.
  • If you prefer a sauced wing, toss them immediately after they come out of the oven while they are hot.
