Description

Easy crepes filled with a creamy mixture and sweet peaches. A simple treat kids will love.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted unsalted butter, plus more for greasing
  • 1 (15 ounce) can sliced peaches in light syrup, drained
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, and salt.
  2. In a separate bowl, whisk the eggs, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and whisk until smooth. Let the batter rest for 10-15 minutes.
  4. Heat a lightly greased non-stick skillet or crepe pan over medium heat. Pour about 1/4 cup of batter into the pan, tilting to coat the bottom evenly.
  5. Cook for 1-2 minutes, until the edges are set and the bottom is golden. Flip and cook for another 30-60 seconds.
  6. Slide the crepe onto a plate. Repeat with the remaining batter, lightly greasing the pan as needed.
  7. In a medium bowl, beat the softened cream cheese until smooth.
  8. Add the powdered sugar and vanilla extract and beat until combined.
  9. Spread a thin layer of the cream cheese mixture onto each crepe.
  10. Place a few drained peach slices on top of the cream cheese filling.
  11. Fold or roll the crepes. Serve immediately.

  • Resting the batter helps create tender crepes.
  • Make sure the skillet isn’t too hot to prevent burning.
  • Adjust the amount of powdered sugar in the filling to your liking.
