- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted unsalted butter, plus more for greasing
- 1 (15 ounce) can sliced peaches in light syrup, drained
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the flour, granulated sugar, and salt.
- In a separate bowl, whisk the eggs, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and whisk until smooth. Let the batter rest for 10-15 minutes.
- Heat a lightly greased non-stick skillet or crepe pan over medium heat. Pour about 1/4 cup of batter into the pan, tilting to coat the bottom evenly.
- Cook for 1-2 minutes, until the edges are set and the bottom is golden. Flip and cook for another 30-60 seconds.
- Slide the crepe onto a plate. Repeat with the remaining batter, lightly greasing the pan as needed.
- In a medium bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract and beat until combined.
- Spread a thin layer of the cream cheese mixture onto each crepe.
- Place a few drained peach slices on top of the cream cheese filling.
- Fold or roll the crepes. Serve immediately.

- Resting the batter helps create tender crepes.
- Make sure the skillet isn’t too hot to prevent burning.
- Adjust the amount of powdered sugar in the filling to your liking.
