Description

Use up those holiday leftovers in this warm, hearty Creamy Turkey Chowder, perfectly served inside toasted sourdough bread bowls. It is a comforting dish perfect for a post-holiday gathering.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 4 cups turkey or chicken broth
  • 2 cups cooked, shredded turkey
  • 2 medium potatoes, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup frozen corn
  • Salt and black pepper to taste
  • 4 sourdough bread loaves (for bowls)

Instructions

  1. Hollow out the center of each sourdough loaf, creating a bowl. Set the removed bread aside.
  2. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in thyme and sage. Cook for 1 minute until fragrant.
  4. Pour in the broth. Add the diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender, about 10-15 minutes.
  5. Stir in the shredded turkey and frozen corn. Simmer for 5 minutes to heat through.
  6. Reduce heat to low. Slowly stir in the heavy cream. Heat gently until warmed through; do not boil.
  7. Season generously with salt and pepper.
  8. Toast the hollowed-out bread bowls lightly in the oven until crisp.
  9. Ladle the chowder into the toasted sourdough bowls. Serve immediately.

Notes

  • This chowder is a fantastic way to repurpose leftover holiday turkey.
  • For extra flavor, you can rub the inside of the bread bowls with garlic before toasting.
  • You can thicken the chowder further by mixing 1 tablespoon of flour with a little cold water and stirring it in before adding the cream.
