Description

Make rich, creamy Southern-style cheese grits using sharp cheddar and heavy cream for a perfect breakfast or side dish.


Ingredients

  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup stone ground grits (not instant)
  • 4 tablespoons unsalted butter
  • 1 1/2 cups sharp cheddar cheese, freshly grated

Instructions

  1. Combine water, milk, heavy cream, salt, and pepper in a medium saucepan. Bring the mixture to a boil over medium-high heat.
  2. Slowly whisk in the grits to prevent lumps. Reduce the heat to low.
  3. Cook, stirring frequently, for 25 to 30 minutes, or until the grits are thick and tender. If the mixture becomes too thick, add a splash more milk or water.
  4. Remove the saucepan from the heat. Stir in the butter until it melts completely.
  5. Add the grated sharp cheddar cheese. Stir gently until the cheese is fully melted and incorporated, creating a smooth texture. Do not return the grits to the heat after adding the cheese.
  6. Serve immediately.

Notes

  • Use freshly grated cheese; pre-shredded cheese contains anti-caking agents that prevent smooth melting.
  • For a richer flavor, substitute half of the water with chicken or vegetable broth.
  • If you prefer a thinner consistency, add more liquid during the final cooking stage.
