- 1 pound mushrooms, sliced (such as cremini or button)
- 1 medium onion, chopped
- 2 cloves garlic, minced

- 1/4 cup dry white wine (optional)
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley, for garnish
- 12 ounces egg noodles, cooked
Instructions
- Heat olive oil in a large skillet over medium heat. Add mushrooms and onion. Cook, stirring occasionally, until softened and lightly browned, about 8-10 minutes.
- Add garlic, thyme, salt, and pepper. Cook for 1 minute more until fragrant.
- If using, pour in white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes until mostly evaporated.
- Pour in vegetable broth. Bring to a simmer, then reduce heat and cook for 5 minutes, allowing the sauce to thicken slightly.
- Stir in heavy cream and Dijon mustard. Cook, stirring, until the sauce is heated through and creamy, about 2-3 minutes. Do not boil.
- Serve the stroganoff immediately over cooked egg noodles. Garnish with fresh parsley.
Notes
- Feel free to use your favorite type of mushrooms.
- For a richer flavor, you can substitute half-and-half for the heavy cream.
- If you don’t have white wine, you can simply skip this step or add a splash of lemon juice for brightness.
