Description

A warm and encouraging recipe for Creamy Mushroom Stroganoff, perfect for a cozy vegetarian meal served over noodles. This recipe is inspired by the joy of cooking and sharing food.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound mushrooms, sliced (such as cremini or button)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dry white wine (optional)
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped fresh parsley, for garnish
  • 12 ounces egg noodles, cooked

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add mushrooms and onion. Cook, stirring occasionally, until softened and lightly browned, about 8-10 minutes.
  2. Add garlic, thyme, salt, and pepper. Cook for 1 minute more until fragrant.
  3. If using, pour in white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes until mostly evaporated.
  4. Pour in vegetable broth. Bring to a simmer, then reduce heat and cook for 5 minutes, allowing the sauce to thicken slightly.
  5. Stir in heavy cream and Dijon mustard. Cook, stirring, until the sauce is heated through and creamy, about 2-3 minutes. Do not boil.
  6. Serve the stroganoff immediately over cooked egg noodles. Garnish with fresh parsley.

Notes

  • Feel free to use your favorite type of mushrooms.
  • For a richer flavor, you can substitute half-and-half for the heavy cream.
  • If you don’t have white wine, you can simply skip this step or add a splash of lemon juice for brightness.
  • This dish is best served immediately.
