  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: Cooked rice or pasta for serving

Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. Add the broccoli florets to the skillet. Pour in the chicken broth. Cover and steam the broccoli for 3-4 minutes until bright green and tender-crisp.
  5. Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  6. Reduce the heat to low. Stir in the Parmesan cheese until the sauce is smooth and slightly thickened.
  7. Return the cooked chicken to the skillet. Toss everything together to coat well in the creamy sauce.
  8. Taste and adjust salt and pepper as needed. Serve immediately over your choice of rice or pasta.

  • For a thicker sauce, whisk 1 teaspoon of cornstarch with 1 tablespoon of cold water before adding it with the heavy cream.
