- 6 large eggs
- 1/2 cup mayonnaise (or more, to taste)
- 1 tablespoon Dijon mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 stalk celery, finely chopped (optional, for crunch)
Instructions
- Place the eggs in a saucepan and cover with cold water.
- Bring the water to a rolling boil over high heat. Once boiling, cover the pan, remove it from the heat, and let it stand for exactly 10 minutes for hard-boiled eggs.
- Immediately drain the hot water and cover the eggs with ice water to stop the cooking process. Let them cool completely, about 10 minutes.
- Peel the cooled eggs and place them in a medium bowl.
- Roughly chop the eggs. You want some texture, not a complete paste.
- Add the mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the bowl.
- Gently fold all ingredients together until just combined. Do not overmix; a few larger chunks are good.
- If using, stir in the finely chopped celery now.
- Taste the salad and adjust seasoning, adding more salt, pepper, or mustard if needed for extra tang.
- Use immediately on bread, crackers, or store in the refrigerator.
Notes
- For extra tang, add a small splash of pickle juice instead of some of the vinegar.
- Chill the salad for at least 30 minutes before serving to allow the flavors to blend.
- If you prefer a smoother texture, use a fork to mash the eggs against the side of the bowl before adding the wet ingredients.
- For meal prep, store the egg salad in an airtight container in the refrigerator for up to 4 days.
