Description

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 small yellow onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and cook until browned on all sides. You do not need to cook it through at this stage.
  3. Add onion, carrots, and celery to the pot. Cook until vegetables begin to soften, about 5 minutes.
  4. Stir in garlic, Italian seasoning, thyme, pepper, and salt. Cook for 1 minute until fragrant.
  5. Pour in chicken broth. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 10 minutes, or until the chicken is cooked through.
  6. Remove the chicken, shred it using two forks, and return the shredded chicken to the pot.
  7. Increase heat to medium-low. Add the tortellini to the simmering broth. Cook according to package directions, usually 3-5 minutes.
  8. Reduce heat to low. Stir in the heavy cream and Parmesan cheese until fully combined and the soup is creamy. Do not let the soup boil after adding the cream.
  9. Taste and adjust salt and pepper as needed.
  10. Serve hot, garnished with fresh parsley.

Notes

  • For a Tuscan twist, add a handful of fresh spinach during the last 2 minutes of cooking.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering soup before adding the cream.
