A simple, fresh, and creamy sauce featuring avocado and cilantro, perfect for tacos, grilled meats, or salads.

- 2 ripe avocados
- 1 cup fresh cilantro leaves, packed
- 1/2 cup water (or more for thinner consistency)
- 1/4 cup lime juice (about 2 limes)
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
- Add the packed cilantro leaves, water, lime juice, garlic cloves, salt, and pepper to the blender.
- Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
- With the blender running on low, slowly drizzle in the olive oil until fully incorporated.
- Taste the sauce. Add more salt or lime juice if you prefer a stronger flavor. If the sauce is too thick, add water, one tablespoon at a time, until you reach your desired consistency.
- Transfer the sauce to an airtight container.
Notes
- For a richer, dairy-free creamy texture, substitute 1/4 cup of the water with plain, unsweetened dairy-free yogurt or sour cream.
- If you do not have a high-speed blender, make sure your avocados are very soft to achieve the smoothest texture.
- This sauce is excellent served over grilled chicken, fish tacos, burrito bowls, or as a dip for vegetables.
