Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries, roughly chopped
  • 1/2 cup white chocolate chips
  • 1 cup granulated sugar (for frosting)
  • 1/4 cup milk
  • 1/2 cup (1 stick) unsalted butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 teaspoon almond extract (for frosting)
  • 2 cups white chocolate chips (for topping)
  • 1/4 cup finely chopped pistachios (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy lifting.
  2. In a large bowl, cream together 1 cup softened butter, 1 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped dried cranberries and 1/2 cup white chocolate chips.
  6. Press the dough evenly into the prepared baking pan.
  7. Bake for 20 to 25 minutes, or until the edges are lightly golden. Let the base cool completely in the pan.
  8. While the base cools, prepare the frosting. In a medium bowl, beat together 1/2 cup softened butter, 1 cup granulated sugar, milk, 1 teaspoon vanilla extract, and almond extract until smooth and creamy.
  9. Spread the frosting evenly over the cooled base.
  10. Melt the 2 cups of white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring well after each, until smooth.
  11. Pour the melted white chocolate over the frosting layer and spread quickly to cover.
  12. Sprinkle the chopped pistachios, if using, over the melted white chocolate while it is still wet.
  13. Chill the bars in the refrigerator for at least 1 hour to allow the topping to set firmly.
  14. Lift the bars out of the pan using the parchment paper overhang and cut into squares.

Notes

  • For a brighter cranberry flavor, you can lightly soak the dried cranberries in warm water for 10 minutes before chopping and using them in the dough.
  • If you prefer a thicker frosting, reduce the milk to 2 tablespoons.
  • This recipe tastes best when served chilled.
