  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)

Instructions

  1. Prepare all your vegetables: rinse and drain the black beans and corn. Halve the tomatoes, dice the bell pepper and red onion, and mince the jalapeño if you are using it. Chop the fresh cilantro.
  2. In a large bowl, combine the rinsed black beans, corn, tomatoes, red bell pepper, red onion, jalapeño, and cilantro.
