Instructions
- In a bowl, whisk together the cottage cheese and eggs until smooth.
- In a separate bowl, combine the flour, sugar, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Heat a lightly greased griddle or non-stick pan over medium heat.
- Pour 1/4 cup of batter for each pancake onto the hot griddle.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
