Description

Easy and fluffy protein-packed pancakes for kids using cottage cheese.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon sugar (optional)
  • 1/2 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Blend cottage cheese, eggs, and vanilla extract until smooth.
  2. In a separate bowl, whisk together flour, baking powder, and sugar (if using).
  3. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  4. Heat a lightly buttered or oiled griddle or non-stick pan over medium heat.
  5. Pour 1/4 cup of batter per pancake onto the hot surface.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve warm with your child’s favorite toppings.
