- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon sugar (optional)
- 1/2 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- Blend cottage cheese, eggs, and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking powder, and sugar (if using).
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Heat a lightly buttered or oiled griddle or non-stick pan over medium heat.
- Pour 1/4 cup of batter per pancake onto the hot surface.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve warm with your child’s favorite toppings.
Notes
- These pancakes are naturally soft due to the cottage cheese.
- You can add fruit like blueberries to the batter.
- Leftovers can be stored in the refrigerator for up to 3 days.
