Instructions
- Place the cottage cheese in a small, microwave-safe mug or ramekin. Blend it briefly with a fork until mostly smooth, or use a small immersion blender.
- Add the cocoa powder, sweetener, vanilla extract, and baking powder to the mug.
- Mix all ingredients thoroughly until you have a uniform batter. Do not overmix.
- Stir in the chocolate chips, if using.
- Microwave on high power for 50 to 70 seconds. Cooking time depends on your microwave’s wattage. Start checking at 50 seconds.
- The brownie is done when the edges look set but the center is still slightly soft and fudgy.
- Let it cool in the mug for one minute before eating directly from the container.
