Ingredients

  • 1 tablespoon cocoa powder
  • 1 tablespoon sweetener (like erythritol or sugar)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Place the cottage cheese in a small, microwave-safe mug or ramekin. Blend it briefly with a fork until mostly smooth, or use a small immersion blender.
  2. Add the cocoa powder, sweetener, vanilla extract, and baking powder to the mug.
  3. Mix all ingredients thoroughly until you have a uniform batter. Do not overmix.
  4. Stir in the chocolate chips, if using.
  5. Microwave on high power for 50 to 70 seconds. Cooking time depends on your microwave’s wattage. Start checking at 50 seconds.
  6. The brownie is done when the edges look set but the center is still slightly soft and fudgy.
  7. Let it cool in the mug for one minute before eating directly from the container.
