Description

Make smooth, custardy bacon and Gruyère egg bites at home using a simple oven method that mimics the texture of popular coffee shop versions.

Ingredients

Scale
  • 1 cup cottage cheese (blended smooth)
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup shredded Gruyère cheese
  • 1/2 cup cooked, crumbled bacon

Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease a standard 12-cup muffin tin or line it with silicone liners.
  2. In a blender, combine the cottage cheese, heavy cream, milk, eggs, salt, pepper, and garlic powder. Blend until completely smooth, about 1 minute. This step is key for a smooth texture.
  3. Stir in the shredded Gruyère cheese and crumbled bacon by hand. Do not overmix.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Place the muffin tin inside a larger baking pan. Carefully pour hot water into the larger pan until the water reaches halfway up the sides of the muffin cups. This creates a water bath (bain-marie).
  6. Bake for 25 to 30 minutes, or until the centers are just set. They should still have a slight jiggle.
  7. Remove the muffin tin from the water bath immediately. Let the bites cool in the tin for 10 minutes before carefully removing them.

Notes

  • For the smoothest texture, press the cottage cheese mixture through a fine-mesh sieve after blending to remove any lumps.
  • If you use an electric pressure cooker (Instant Pot), cook on high pressure for 8 minutes with a natural pressure release for 5 minutes, then quick release the rest.
  • To prevent weeping, do not overcook the bites; remove them when they are slightly underdone in the center.
