Description

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup buttermilk
  • For the Swirl:
  • 1/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. In a small bowl, combine the mashed bananas and buttermilk.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the banana-buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Prepare the swirl: In a small bowl, combine the brown sugar and cinnamon.
  8. Pour half of the batter into the prepared loaf pan. Drizzle half of the melted butter over the batter, then sprinkle half of the cinnamon sugar mixture.
  9. Pour the remaining batter over the top. Drizzle with the remaining melted butter and sprinkle with the remaining cinnamon sugar mixture.
  10. Use a knife or skewer to gently swirl the cinnamon sugar into the batter.
  11. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
