- 2 large eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated zucchini (about 2 medium zucchinis, squeezed dry)
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, beat together the granulated sugar, eggs, and vegetable oil until well combined. Stir in the vanilla extract.
- Add the grated zucchini to the wet ingredients and mix.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Squeeze the grated zucchini very well to remove excess moisture. This is key for a moist bread.
- You can add chopped nuts like walnuts or pecans along with the chocolate chips.
- For a richer flavor, you can use half all-purpose flour and half whole wheat flour.
- Ensure your eggs and oil are at room temperature for better incorporation.
