- 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1–2 chipotle peppers in adobo sauce, minced (adjust to your spice preference)
- 1 tablespoon adobo sauce from the can
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Chopped fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the olive oil, minced chipotle peppers, adobo sauce, lime juice, salt, and pepper.
- Add the cubed sweet potatoes to the bowl and toss well to coat each piece evenly with the chipotle-lime mixture.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, flipping them halfway through.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- For a milder spice, use only one chipotle pepper.
- If you don’t have chipotle peppers in adobo sauce, you can use smoked paprika for a smoky flavor, but you’ll miss the heat and distinct chipotle taste.
- Ensure the sweet potatoes are in a single layer on the baking sheet for even roasting.
