Description

These Chipotle Lime Roasted Sweet Potatoes are a flavor explosion! They’re smoky, spicy, sweet, and perfectly tender, making them an irresistible side dish.


Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 12 chipotle peppers in adobo sauce, minced (adjust to your spice preference)
  • 1 tablespoon adobo sauce from the can
  • 1 lime, juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the olive oil, minced chipotle peppers, adobo sauce, lime juice, salt, and pepper.
  3. Add the cubed sweet potatoes to the bowl and toss well to coat each piece evenly with the chipotle-lime mixture.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, flipping them halfway through.
  6. Serve hot, garnished with fresh cilantro if desired.

Notes

  • For a milder spice, use only one chipotle pepper.
  • If you don’t have chipotle peppers in adobo sauce, you can use smoked paprika for a smoky flavor, but you’ll miss the heat and distinct chipotle taste.
