  • 1.5 lbs flank steak
  • 1/4 cup olive oil, divided
  • 1 tablespoon red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh parsley, packed
  • 1/2 cup fresh cilantro, packed
  • 4 cloves garlic
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups mixed greens
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together 1/4 cup olive oil, 1 tablespoon red wine vinegar, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Place the flank steak in a shallow dish and pour the marinade over it. Let it marinate for at least 30 minutes, or up to 2 hours.
  4. While the steak marinates, prepare the chimichurri. In a food processor, combine parsley, cilantro, garlic, 1/4 cup olive oil, 2 tablespoons red wine vinegar, red pepper flakes, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Process until finely chopped and well combined.
  5. Grill the flank steak for 4-6 minutes per side for medium-rare, or until it reaches your desired doneness.
  6. Let the steak rest for 10 minutes before slicing it thinly against the grain.
  7. In a large bowl, combine the mixed greens, cherry tomatoes, and red onion.
  8. Add the sliced flank steak to the salad.
  9. Drizzle the chimichurri sauce over the salad and toss gently to combine.
  10. Serve immediately and enjoy your delicious creation!
