Description
Make this easy, one-pan creamy Tuscan chicken sausage pasta for a quick weeknight dinner.
Ingredients
Scale
- 1 pound dried pasta (penne or rotini)
- 1 tablespoon olive oil
- 1 pound pre-cooked chicken sausage, sliced
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, drained and chopped
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining. Set the drained pasta aside.
- Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until lightly browned, about 4 minutes. Remove the sausage and set it aside.
- Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic, Italian seasoning, and smoked paprika. Cook for 1 minute until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
- Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth.
- Add the spinach and sun-dried tomatoes to the sauce. Stir until the spinach wilts, about 2 minutes.
- Return the cooked sausage and the drained pasta to the skillet. Toss everything together to coat evenly with the sauce.
- If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency. Season with salt and pepper.
- Serve immediately.
Notes
- Use a smoked chicken sausage for a deeper flavor profile.
- For a lower-fat option, substitute half-and-half for the heavy cream, but the sauce may be thinner.
- You can substitute kale for spinach if you prefer a heartier green.
