Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup Champagne (or sparkling white grape juice for non-alcoholic version)
  • 1 teaspoon vanilla extract
  • 1/2 cup Champagne (or sparkling juice) for frosting
  • 1/2 cup unsalted butter, softened, for frosting
  • 3 cups powdered sugar, sifted, for frosting
  • 1/4 teaspoon salt, for frosting
  • 1 teaspoon vanilla extract, for frosting
  • Food coloring (optional, for festive color)
  • 1 packet unflavored Pop Rocks candy

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter and mix on low speed until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs, buttermilk, 1/4 cup Champagne, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Fill the cupcake liners about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
  8. To make the frosting, beat the 1/2 cup softened butter until creamy.
  9. Gradually add the powdered sugar and salt, beating until smooth.
  10. Add the vanilla extract and 1/2 cup Champagne, beating until the frosting is light and fluffy. Add food coloring now if desired.
  11. Once cupcakes are cool, pipe or spread frosting onto each cupcake top.
  12. Just before serving, sprinkle the top of each frosted cupcake generously with Pop Rocks candy. Serve immediately for the best crackle effect.
