Description

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1 cup whole milk
  • 8 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt, plus more for boiling
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh chives, for garnish (optional)

Instructions

  1. Place the quartered potatoes in a large pot. Cover with cold water by about an inch. Add a generous pinch of salt to the water.
  2. Bring the water to a boil over high heat. Reduce the heat to medium and simmer until the potatoes are fork-tender, about 15-20 minutes.
  3. While the potatoes are cooking, warm the milk in a small saucepan over low heat. Do not boil.
  4. Drain the cooked potatoes thoroughly. Return them to the hot, empty pot.
  5. Let the potatoes sit in the pot for about 1 minute to allow excess moisture to evaporate.
  6. Add the softened butter, minced garlic, 1/2 teaspoon salt, and pepper to the pot with the potatoes.
  7. Mash the potatoes with a potato masher until they are mostly smooth.
  8. Gradually pour in the warm milk while continuing to mash until the potatoes reach your desired creamy consistency.
  9. Taste and adjust seasoning if needed.
  10. Serve hot, garnished with fresh chives if desired.

Notes

  • For extra garlic flavor, you can roast the garlic cloves before mincing and adding them to the potatoes.
  • If you prefer a smoother texture, you can use a ricer or food mill for mashing.
