- 1 medium butternut squash, roasted and pureed (about 1.5 cups puree)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/4 cup chopped fresh sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 lasagna noodles
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Cooking spray
Instructions
- Preheat your oven to 375°F (190°C). Lightly coat a 9×13 inch baking dish with cooking spray.
- Cook the lasagna noodles according to package directions until al dente. Drain and lay them flat on a clean surface.
- In a medium bowl, mix the butternut squash puree, ricotta cheese, Parmesan cheese, egg, sage, salt, and pepper until well combined. This is your filling.
- Spread about 1/2 cup of marinara sauce over the bottom of the prepared baking dish.
- Take one cooked lasagna noodle and spread about 1/4 cup of the butternut squash filling evenly over its surface.
- Tightly roll up the noodle, starting from one end. Place the roll-up seam-side down in the baking dish. Repeat with the remaining noodles and filling.
- Pour the remaining marinara sauce over the roll-ups.
- Sprinkle the mozzarella cheese evenly over the top.
- Bake for 25 to 30 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
- Let the roll-ups rest for 5 minutes before serving. Enjoy your creation!
Notes
- Roast the butternut squash until very tender for the smoothest puree.
- Feel free to add a pinch of nutmeg to the filling for extra warmth.
