Ingredients

  • 1 medium butternut squash, roasted and pureed (about 1.5 cups puree)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1/4 cup chopped fresh sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly coat a 9×13 inch baking dish with cooking spray.
  2. Cook the lasagna noodles according to package directions until al dente. Drain and lay them flat on a clean surface.
  3. In a medium bowl, mix the butternut squash puree, ricotta cheese, Parmesan cheese, egg, sage, salt, and pepper until well combined. This is your filling.
  4. Spread about 1/2 cup of marinara sauce over the bottom of the prepared baking dish.
  5. Take one cooked lasagna noodle and spread about 1/4 cup of the butternut squash filling evenly over its surface.
  6. Tightly roll up the noodle, starting from one end. Place the roll-up seam-side down in the baking dish. Repeat with the remaining noodles and filling.
  7. Pour the remaining marinara sauce over the roll-ups.
  8. Sprinkle the mozzarella cheese evenly over the top.
  9. Bake for 25 to 30 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
  10. Let the roll-ups rest for 5 minutes before serving. Enjoy your creation!

Notes

  • Roast the butternut squash until very tender for the smoothest puree.
  • Feel free to add a pinch of nutmeg to the filling for extra warmth.
  • If the filling seems too loose, add a tablespoon of breadcrumbs.
