Ingredients

  • 1 bone-in, fully cooked ham (about 810 lbs)
  • 1 cup packed brown sugar
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup water (for glaze)
  • 1/2 cup apple cider (for gravy)
  • 2 tablespoons cornstarch
  • 1/4 cup cold water (for gravy slurry)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325 degrees F (160 degrees C). Place the ham cut-side down in a roasting pan.
  2. In a small bowl, whisk together the brown sugar, Dijon mustard, and apple cider vinegar until smooth. This is your glaze.
  3. Brush half of the glaze mixture evenly over the surface of the ham.
  4. Pour the 1/4 cup of water into the bottom of the roasting pan to keep the ham moist.
  5. Bake the ham for about 12-15 minutes per pound, or until the internal temperature reaches 140 degrees F (60 degrees C).
  6. During the last 30 minutes of baking, brush the remaining glaze over the ham every 10 minutes for a thick, dark crust.
  7. Once the ham reaches temperature, remove it from the oven and let it rest for 15 minutes before carving.
  8. While the ham rests, prepare the gravy: Pour the pan drippings into a saucepan (discard excess fat if desired). Add the 1/2 cup of apple cider.
  9. In a small cup, whisk the cornstarch with the 1/4 cup of cold water to create a slurry.
  10. Bring the cider and drippings to a simmer over medium heat. Whisk in the slurry slowly until the gravy thickens to your liking. Season with salt and pepper.
  11. Slice the ham and serve immediately with the warm Cider Gravy.

Notes

  • If your ham is pre-glazed, use only half of the brown sugar mixture for a lighter coating.
  • For extra moisture, you can tent the ham loosely with foil during the initial baking phase.
