Create a showstopping holiday centerpiece with this Brown Sugar Glazed Ham, perfectly complemented by a rich and flavorful Cider Gravy. This recipe brings joy and connection to your holiday table.
Ingredients
- Ham (fully cooked, bone-in or boneless): 8-10 lbs
- Brown Sugar: 1 cup, packed
- Apple Cider Vinegar: 1/4 cup
- Dijon Mustard: 2 tablespoons
- Ground Cloves: 1/2 teaspoon
- Whole Cloves (for studding, optional): 1/4 cup
- Apple Cider: 2 cups (for gravy)
- Chicken or Turkey Stock: 2 cups
- Cornstarch: 2 tablespoons
- Water: 2 tablespoons
- Salt and Pepper: To taste
Instructions
- Preheat your oven to 325°F (160°C). Place the ham cut-side down in a roasting pan. If you are studding the ham, insert whole cloves into the fat layer in a decorative pattern.
- In a small bowl, whisk together the brown sugar, apple cider vinegar, Dijon mustard, and ground cloves to create the glaze.
- Brush about one-third of the glaze mixture evenly over the surface of the ham.
- Roast the ham for approximately 13-15 minutes per pound, basting with the remaining glaze every 20 minutes.
- If your ham is fully cooked, heat it until the internal temperature reaches 140°F (60°C). For the last 15 minutes of cooking, you can increase the oven temperature to 400°F (200°C) to caramelize the glaze.
- Once the ham reaches temperature, remove it from the oven and let it rest for 15-20 minutes before slicing. Tent loosely with foil.
- While the ham rests, prepare the gravy. Pour the pan drippings into a saucepan, reserving about 1/4 cup of the fat. Discard the rest.
- Place the saucepan over medium heat. Whisk in the cornstarch until smooth.
- Gradually whisk in the apple cider and chicken stock until the mixture is smooth.
- Bring the mixture to a simmer, whisking constantly until the gravy thickens enough to coat the back of a spoon. Season with salt and pepper to your taste.
- Slice the rested ham and serve immediately with the warm Cider Gravy.
Notes
- If your ham is pre-cooked, you are mainly reheating it and applying the glaze. Adjust cooking time based on package directions.
- You can substitute maple syrup for brown sugar in the glaze for a slight flavor variation.
- For a smoother gravy, strain it through a fine-mesh sieve before serving.
