Ingredients

  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups vegetable or chicken broth
  • 4 cups fresh broccoli florets
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 4 tablespoons butter
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 4 large round bread loaves (for bowls)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Pour in broth. Add broccoli florets, thyme, salt, and pepper. Bring to a simmer.
  4. Cook until broccoli is tender, about 10 minutes.
  5. While the soup simmers, make the roux: In a separate small saucepan, melt butter over medium heat.
  6. Whisk in flour and cook for 1 minute, stirring constantly. Do not let it brown.
  7. Slowly whisk in milk until the mixture is smooth and thickens slightly.
  8. Remove from heat and stir in shredded cheddar cheese until completely melted and smooth.
  9. Gradually stir the cheese sauce into the soup mixture. Heat through, but do not boil after adding cheese.
  10. For the bowls: Slice the top off each bread loaf and hollow out the center, creating a bowl shape.
