Easy and delicious black bean burgers perfect for a kid-friendly Meatless Monday dinner. These burgers are simple to make and a great way to introduce plant-based meals.

- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 egg
- 1 tablespoon ketchup
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Buns and toppings for serving
Instructions
- Mash the black beans in a medium bowl until mostly mashed but still with some texture.
- Add the breadcrumbs, chopped onion, egg, ketchup, chili powder, salt, and pepper to the bowl. Mix until well combined.
- Divide the mixture into four equal portions and shape into patties.
- Heat a little oil in a skillet over medium heat.
- Cook the patties for 4-5 minutes per side, or until heated through and browned.
- Serve on buns with your favorite toppings.
Notes
- You can use gluten-free breadcrumbs for a gluten-free option.
- Finely grate the onion if your kids don’t like visible pieces.
- These patties can be made ahead of time and stored in the refrigerator for up to 3 days.
