Description

Easy and delicious black bean burgers perfect for a kid-friendly Meatless Monday dinner. These burgers are simple to make and a great way to introduce plant-based meals.


Ingredients

Scale
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1 tablespoon ketchup
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Buns and toppings for serving

Instructions

  1. Mash the black beans in a medium bowl until mostly mashed but still with some texture.
  2. Add the breadcrumbs, chopped onion, egg, ketchup, chili powder, salt, and pepper to the bowl. Mix until well combined.
  3. Divide the mixture into four equal portions and shape into patties.
  4. Heat a little oil in a skillet over medium heat.
  5. Cook the patties for 4-5 minutes per side, or until heated through and browned.
  6. Serve on buns with your favorite toppings.

Notes

  • You can use gluten-free breadcrumbs for a gluten-free option.
  • Finely grate the onion if your kids don’t like visible pieces.
  • These patties can be made ahead of time and stored in the refrigerator for up to 3 days.
