Create a delicious vegan BBQ pulled-pork style sandwich using shredded jackfruit. This recipe is inspired by the joy of cooking and sharing.

- 2 cans (20 oz each) young green jackfruit in brine or water, drained and rinsed
- 1 tbsp olive oil
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup your favorite BBQ sauce
- 2 tbsp apple cider vinegar
- 1 tbsp brown sugar (optional, for sweetness)
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- 4–6 vegan burger buns
- Coleslaw (optional, for topping)
Instructions
- Prepare the jackfruit: Drain and rinse the jackfruit. Trim away any tough core pieces and seeds. Shred the jackfruit using two forks or your hands until it resembles pulled pork.
- Sauté aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Cook the jackfruit: Add the shredded jackfruit to the skillet with the onions and garlic. Cook for 5-7 minutes, stirring occasionally, until it starts to dry out and lightly brown.
- Add the sauce and seasonings: Stir in the BBQ sauce, apple cider vinegar, brown sugar (if using), smoked paprika, garlic powder, and onion powder. Mix well to coat the jackfruit evenly.
- Simmer: Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes. Stir occasionally, allowing the flavors to meld and the jackfruit to become tender.
- Season: Taste and season with salt and black pepper as needed. If the sauce is too thick, add a splash of water or more BBQ sauce.
- Assemble sandwiches: Toast the vegan burger buns lightly. Spoon a generous amount of the BBQ jackfruit mixture onto the bottom half of each bun. Top with coleslaw if desired, and place the top bun on.
