- 2 1/4 teaspoons active dry yeast
- 1/2 cup granulated sugar, divided
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 cup mashed ripe bananas (about 2 medium)
- 3 1/2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened (for filling)
- 1/2 cup packed brown sugar (for filling)
- 2 teaspoons ground cinnamon (for filling)
- 1/2 cup cream cheese, softened (for glaze)
- 2 tablespoons unsalted butter, softened (for glaze)
- 1 cup powdered sugar (for glaze)
- 1 teaspoon vanilla extract (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Combine warm milk, yeast, and 1 teaspoon of the granulated sugar in a large bowl. Let stand for 5 minutes until foamy.
- Stir in the melted butter, remaining granulated sugar, egg, and mashed bananas into the yeast mixture.
- In a separate bowl, whisk together the flour, salt, and 1 teaspoon of cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for 5-7 minutes until smooth. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
- While the dough rises, prepare the filling: In a small bowl, mix the softened butter, brown sugar, and 2 teaspoons of cinnamon until combined.
- Punch down the risen dough. On a lightly floured surface, roll the dough into a large rectangle, about 12×18 inches.
- Spread the filling mixture evenly over the dough, leaving a 1-inch border on one long edge.
- Tightly roll the dough up starting from the long edge opposite the border. Pinch the seam closed.
- Cut the log into 12 equal rolls. Place the rolls cut-side up in a greased 9×13 inch baking pan. Cover and let rise for 30 minutes.
- Preheat your oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown.
- While the rolls cool slightly, prepare the glaze: Beat the cream cheese, 2 tablespoons of softened butter, powdered sugar, and vanilla extract until smooth. Add milk, one tablespoon at a time, until the desired drizzling consistency is reached.
- Spread the glaze over the warm rolls before serving.
Notes
- Use very ripe, spotty bananas for the best banana flavor and moisture.
- If you prefer a stronger cinnamon flavor, add 1/2 teaspoon of ground nutmeg to the filling mixture.
- For softer rolls, cover the pan with foil for the first 15 minutes of baking.
