Ingredients

  • 2 slices of your favorite bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 12 tablespoons sriracha
  • Optional: Red pepper flakes for extra heat

Instructions

  1. Toast the bread slices until golden brown.
  2. While the bread is toasting, mash the avocado in a small bowl with lemon juice, salt, and pepper.
  3. Poach the eggs: Fill a small saucepan with about 2 inches of water and bring to a gentle simmer. Crack each egg into a separate small bowl. Carefully slide the eggs into the simmering water. Cook for 3-4 minutes for a runny yolk, or longer for a firmer yolk. Remove with a slotted spoon.
  4. Spread the mashed avocado evenly over the toasted bread slices.
  5. Place a poached egg on top of the avocado on each slice.
  6. Drizzle with sriracha. Add red pepper flakes if desired.
  7. Serve immediately.

  • For a smoother avocado mash, you can use a blender or food processor.
