  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon

  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Chop the apples into small, uniform pieces. Set aside.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In a separate small bowl, whisk together the egg, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
  5. Fold the chopped apples into the batter.
  6. Pour vegetable oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2 inches. Heat the oil to 365 degrees Fahrenheit (185 degrees Celsius). Use a thermometer to check the temperature.
  7. Carefully drop heaping tablespoons of the batter into the hot oil, ensuring you do not overcrowd the pot. Fry about 3 to 4 fritters at a time.
  8. Fry for 2 to 3 minutes per side, turning once, until they are deep golden brown and cooked through.
  9. Remove the fritters with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  10. While the fritters cool slightly, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  11. Dip or drizzle the warm fritters with the vanilla glaze. Let the glaze set before serving.

Notes

  • For the best texture, use slightly tart apples like Granny Smith.
  • Maintain the oil temperature between 360°F and 370°F for even cooking. If the oil is too cool, the fritters will be greasy.
