Description

Discover this comforting, homemade apple cobbler recipe. It features tender, cinnamon-spiced apples beneath a rich, buttery biscuit topping. This simple fall baking favorite is better than store-bought and perfect served warm with ice cream.

Ingredients

Scale
  • 6 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and sliced about 1/4 inch thick
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, cut into small pieces (for topping apples)
  • 1 1/2 cups all-purpose flour (for topping)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for topping)
  • 6 tablespoons cold unsalted butter, cut into small cubes (for topping)
  • 1/2 cup buttermilk (for topping)
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9-inch square baking dish or a similar-sized oval dish.
  2. In a large bowl, combine the sliced apples, granulated sugar, brown sugar, 1 tablespoon of flour, cinnamon, nutmeg, and lemon juice. Toss gently until the apples are evenly coated.
  3. Pour the apple mixture into your prepared baking dish. Dot the top of the apples evenly with the 2 tablespoons of small butter pieces.
  4. Prepare the biscuit topping: In a separate medium bowl, whisk together the 1 1/2 cups flour, baking powder, salt, and 1/4 cup sugar.
  5. Cut in the 6 tablespoons of cold cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs, with some pea-sized pieces remaining.
  6. Pour in the buttermilk and stir just until a shaggy dough forms. Do not overmix.
  7. Drop spoonfuls of the biscuit dough randomly over the apple filling, leaving small gaps between the mounds. The topping will spread as it bakes.
  8. Brush the tops of the biscuit mounds lightly with the beaten egg and sprinkle with coarse sugar for a golden crust.
  9. Bake for 40 to 45 minutes, or until the topping is golden brown and the apple filling is bubbly and tender when pierced with a fork.
  10. Let the apple cobbler cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream for the ultimate comfort treat.

Notes

  • For the best texture, make sure your butter for the topping is very cold. This helps create a flaky, biscuit-like result.
  • If you prefer a softer topping, you can roll the dough out and place it over the apples like a crust, but dropping spoonfuls gives you that classic cobbler texture.
  • This recipe works well with a mix of apples to balance sweetness and tartness.
