- 1 cup all-purpose flour
- 1 teaspoon baking powder

- 3/4 cup ice-cold sparkling water
- Cooking spray (high smoke point oil recommended)
Instructions
- Wash and thoroughly dry the green beans. Pat them completely dry with paper towels; moisture prevents crisping.
- In a medium bowl, whisk together the flour, baking powder, salt, and pepper.
- In a separate small bowl, lightly beat the egg. Add the egg to the dry ingredients.
- Slowly pour in the ice-cold sparkling water while gently whisking until just combined. Do not overmix; a few lumps are fine. The batter must remain cold.
- Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
- Lightly spray the air fryer basket with cooking spray.
- Dip the dried green beans into the batter, allowing excess to drip off slightly.
- Place the battered beans in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches.
- Lightly spray the tops of the battered beans with cooking spray.
- Air fry for 8 to 10 minutes, flipping halfway through, until the batter is golden brown and crispy.
- Remove from the air fryer and serve immediately with dipping sauce.
Notes
- For the crispiest results, use sparkling water directly from the refrigerator.
- Do not skip drying the green beans before battering.
- If you want a dipping sauce, whisk together 1/4 cup soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon grated fresh ginger for a quick tentsuyu style sauce.
