Description

A recipe for making extremely crispy green beans in the air fryer using a light tempura-style batter, offering a healthier alternative to deep frying.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 3/4 cup ice-cold sparkling water
  • Cooking spray (high smoke point oil recommended)

Instructions

  1. Wash and thoroughly dry the green beans. Pat them completely dry with paper towels; moisture prevents crisping.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate small bowl, lightly beat the egg. Add the egg to the dry ingredients.
  4. Slowly pour in the ice-cold sparkling water while gently whisking until just combined. Do not overmix; a few lumps are fine. The batter must remain cold.
  5. Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
  6. Lightly spray the air fryer basket with cooking spray.
  7. Dip the dried green beans into the batter, allowing excess to drip off slightly.
  8. Place the battered beans in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches.
  9. Lightly spray the tops of the battered beans with cooking spray.
  10. Air fry for 8 to 10 minutes, flipping halfway through, until the batter is golden brown and crispy.
  11. Remove from the air fryer and serve immediately with dipping sauce.

Notes

  • For the crispiest results, use sparkling water directly from the refrigerator.
  • Do not skip drying the green beans before battering.
  • If you want a dipping sauce, whisk together 1/4 cup soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon grated fresh ginger for a quick tentsuyu style sauce.
